How long will frozen pinkys last in my freezer? I don't want to feed off food thats going to cause harm to any of my animals (i'm new to frozen foods btw)

It's better not to keep any frozen rodents, be they pinkies or jumbo rats, more than 3 months because after that the tissue begins to break down and nutritional value is lost.
Best to order/get a months supply at a time, then re-order.
Also depends on space available in freezer. Keeping them in a sealed tub is also a good idea, stops any contamination and also prevents "freezer burns", especially pinkies.

Other than snakes, I can't think of an animal they are good for.

It's good to feed them to leo's if they have laid eggs etc or as a treat for the calcium. Once a month or so. I have 3 leos. So was thinking about it.
